The parish records and Bishop's transcripts for Sellindge do not record Stephen's birth or baptism although they do show that a Philip and Elizabeth Cheesman had a son James and a daughter Elizabeth in Sellindge around the time of Stephen's likely birth (James was baptised on 24 February 1760 and Elizabeth on 5 Jun 1758). Philip Cheeseman was recorded as marrying Elizabeth Bull in Sellindge on 1 Jan 1751.
Rory Paddock and Dave Dixon believe that Stephen was the son of Stephen Cheeseman (1723-78), a cordwainer, and Angelica Allen (1730-82) who were married at Ashford in Kent on 3 December 1752. They lived at Stephen's home town of Canterbury after their marriage and had six children there: Philip (1753-53), William Allen (1755-58), Mary Ethel (1756-57), Ann (1757), Rebecca (1760-60), Stephen (1761) and Angelica Cheesman (1763-69) all of whom were baptised at the local St Mildred's Anglican Church (four of their children - Philip, William, Mary and Rebecca died as infants and were buried at St Mildred's). In around 1766 Stephen and Angelica and their two surviving children, Ann and Stephen jnr, moved to Dymchurch where they had three further children - Elizabeth (1768-68), Rosamond (1769-82) and Amy (1771-71) - who of whom were baptised (and buried) at the local Saints Peter & Paul Anglican Church. The Dymchurch parish records show that Stephen and Angelica's only surviving daughter, Ann Cheesman, married Jacob Wratten at Dymchurch on 30 October 1777. The following year Stephen snr died and was buried at Dymchurch. His wife Angelica died there four years later.
The parish registers for Lympne and West Hythe show Stephen Cheeseman of the parish of Sellindge marrying Sarah Bejent 'of this parish' in West Hythe on 11 Feb 1783 (Sarah signed the register with a cross). The wedding was witnessed by a John Daniels and a Benjamin Ferris. The Bishop's transcripts for West Hythe show that the couple had at least six children: Rose (Rosina?), Stephen, William, John, Amy and Angelica.
In 1790 our Stephen, who was then a 'labourer of Hythe' was granted Freedom of the City of Canterbury by virtue of being a son of his freeman father (who had been granted freedom of the city in 1744 by virtue of being apprenticed to his father, Philip Cheesman a cordwainer).
Douglas Welby's monograph 'The History of West Hythe' lists among the village's 'noteworthy residents', 1795-1799 a Stephen Cheeseman, grazier.
The borough records for Hythe recorded on 5 Jan 1824, 'Recognizance of John Avieton, victualler, of West Hythe, Stephen Cheesman, looker of West Hythe, and Stephen Weatten of Lympne that good order be kept at the inn the Botolph's Bridge [located in West Hythe], for which licence has been transferred from Lydia Horton to John Avieton'. Both Stephens were required to provide the court with a ten pound surety.
The 1841 and 1851 censuses show no Cheesemans at Sellindge. The 1861 census records a William Cheeseman (42 and owner of 320 acres), his wife Esther (39) and children William F. (7), Albert (5), Edith (4) and niece Ann (7). William had been born in Huntlfill (?) in Kent. His wife and children were born in Sellindge. (Note the three children were all baptised in Sellindge in 1858).
A Stephen Cheesman, aged 80 years died of 'old age' in the New Romney Union House on 29 April 1841. The informant was a Mr Harrison, the governor of the New Romney union house. According to the union house index of births and deaths, Stephen was from West Hythe and was buried at Dymchurch where the coffin was paid for from the West Hythe & Coffin fund.
